<p>4 skinless, boneless chicken breast halves<br />
1/4 cup butter<br />
3 teaspoons minced garlic<br />
1 tablespoon lemon juice<br />
1 (10.75 ounce) can condensed cream of mushroom soup<br />
1 tablespoon Italian seasoning<br />
1/2 cup half-and-half<br />
1/2 cup grated Parmesan cheese<br />
2 (13.5 ounce) cans spinach, drained<br />
4 ounces fresh mushrooms, sliced<br />
2/3 cup bacon bits<br />
2 cups shredded mozzarella cheese</p>

<ol>
<li><span style="font-size: 13.2px;">Preheat oven to 350 degrees F (175 degrees C). Place the chicken breast halves on a baking sheet; bake 20 to 30 minutes, until no longer pink and juices run clear. Remove from heat, and set aside.</span></li>
<li><span style="font-size: 13.2px;">Increase the oven temperature to 400 degrees F (200 degrees C).</span></li>
<li><span style="font-size: 13.2px;">Melt the butter in a medium saucepan over medium heat. Stirring constantly, mix in the garlic, lemon juice, cream of mushroom soup, Italian seasoning, half-and-half, and Parmesan cheese.</span></li>
<li><span style="font-size: 13.2px;">Arrange the spinach over the bottom of a 9&#215;9 inch baking dish. Cover the spinach with the mushrooms. Pour half the mixture from the saucepan over the mushrooms. Arrange chicken breasts in the dish, and cover with the remaining sauce mixture. Sprinkle with bacon bits, and top with mozzarella cheese.</span></li>
<li><span style="font-size: 13.2px;">Bake 20 to 25 minutes in the 400 degrees F (200 degrees C) oven, until bubbly and lightly browned.</span></li>

<p>1 (3 pound) chicken, boiled and deboned<br />

1 (10 ounce) can diced tomatoes with green chile peppers<br />
1 (10.75 ounce) can condensed cream of chicken soup<br />
1 (10.75 ounce) can condensed cream of mushroom soup<br />

3 cups shredded Cheddar cheese</p>

<ol>
<li>Preheat oven to 300 degrees F (150 degrees C.)</li>
<li>Layer the chips in a 9&#215;13 inch casserole dish.</li>
<li>Combine the tomatoes, chicken soup, mushroom soup and onion.</li>
<li>Pour half of mixture over chips.</li>
<li> Layer the chicken pieces, half of the cheese and the remaining soup mixture.</li>
<li>Bake at 300 degrees F (150 degrees C) for 20 minutes.</li>
<li>Top with the remaining cheese and return to the oven until the cheese is melted.</li>

<p>This is a family favourite and easy to prepare especially if you go with the slow cooker option.  The chicken has a ton of flavor and mixed with the peppers and tomato make it a great combination!</p>

<p>4 cups chicken broth<br />
2 ½ cups uncooked long grain rice<br />
1 cup chopped red onion<br />
1 ½ tsp minced garlic, divided<br />
1 ¼ tsp chili powder<br />
1 tsp salt<br />
½ tsp ground turmeric<br />
¼ tsp pepper<br />
2 bay leaves<br />
1 red pepper chopped<br />
1 green pepper chopped<br />
1 tsp minced fresh parsley<br />
½ tsp basil<br />
½ tsp thyme<br />
¼ tsp hot pepper sauce<br />
3 tbsp butter<br />
1 cup sliced mushrooms<br />
1 tomato chopped<br />
500g boneless, skinless chicken breasts<br />
4 lemon slices</p>
<h2><span style="color: #99cc00;">D</span>irections:</h2>
<p>1.	In pot, bring broth, rice, 1 tsp garlic, chili powder, salt tumeric, pepper and bay leaf to a boil<br />
2.	cover, simmer for 20 minutes until rice is tender – throw away bay leaf afterwards<br />
3.	In a skillet, stir peppers, parsley, basil, thyme, pepper sauce and remaining garlic in butter over medium to high heat for 2 minutes<br />
4.	Add in mushrooms, tomato and cook until peppers are crisp.<br />
5.	In another skillet stir the chicken and lemon slices over a medium to high heat until chicken juices are flowing out – nice and clear.<br />
6.	Toss in the rice and serve.<br />

<p>This recipe is a tasty fan favourite that should be a crowd pleaser for any occasion or even if you just want to impress your family for dinner.  Chicken Tetrazzini!  You might say it&#8217;s the dish made famous by that New York themed Italian eatery, East Side Mario&#8217;s but this time it&#8217;s got a little home cooked flare and some family history behind it courtesy of the Tavistock Mennonite Church.  Enjojy!</p>

<p><strong><span style="color: #99cc00;">I</span>ngredients: </strong> (serves 6)</p>
<p>1 medium onion, chopped<br />
1 clove garlic<br />
4 Tbsp butter<br />
2 Tbsp flour<br />
1/2 tsp salt<br />
1/8 tsp thyme<br />
1 chicken bouillon, dissolved in 1 cup water<br />
1/2 cup cream of milk<br />
2 cups cooked spaghetti<br />
2 cups diced cooked chicken or turkey<br />
1 can sliced mushrooms, drained<br />
1/4 cup diced pimiento<br />
3/4 cup grated cheese</p>
<p><strong><span style="color: #99cc00;">D</span>irections:</strong></p>
<ol>
<li>Saute onion and garlic in melted butter until onion is limpy.</li>
<li>Stir in flour and seasonings.  Gradually add chicken broth and cook until smooth and thick.  Take off heat and add milk, chicken, mushrooms, spaghetti and pimiento.</li>
<li>Turn into casserole and sprinkle with cheese.  Bake at 350 degrees Fahrenheit for about 30 minutes until lightly browned and bubbly.</li>

<p>This lethal combination of bacon, cheese, and two pieces of fried chicken is no April Fool&#8217;s joke and packs a over 540 calories 32 grams of fat and 1380mg of sodium!</p>
<p>The &#8220;Double Down&#8221; burger is only available in the States and let&#8217;s hope this heart attack sandwich never makes it&#8217;s way across the border.</p>

<p>Hakka Chinese are a unique group of individuals from China, decendants from the Han culture said to be affiliated with royalty.  Through the ages, the Hakka people have preserved their culture as well as embraced and dapted to the infusion of other ethnic groups.  Over the generations the Hakka people have migrated all over the world from south East Asia, East Africa, Europe, South America, US and Canada but the cultural characteristics remain in tact especially the cuisine.</p>
<p><span id="more-4116"></span>The Chilli Chicken Boneless is a widely popular dish among the Hakka restaurants in the GTA (Fredricks, Lucky&#8217;s, <a href="http://www.yummylocal.com/reviews/asian/lin-garden/"><span style="color: #99cc00;">Lin Garden</span></a>) and now you can make it at home. For those of you who have never tried this dish expect it to be especially spicy and not for the faint hearted stomachs.</p>
<p>Made from chunks of boneless chicken mixed with the chillies, onions, and powders gives the Chili Chicken a spicy Indian flare to the traditional Chinese food which create the distinct Hakka taste that we all come to love.</p>
<p><strong><span style="color: #000000;"><span style="color: #99cc00;">I</span>ngredients:</span></strong><br />
2 large onions, chopped<br />
1/2 c vegetable oil<br />
finely chopped ginger, about 2 tbsp or more<br />
5 cloves garlic, minced<br />
1 tsp cumin powder<br />
1 tsp coriander powder<br />
6 &#8211; 8 chicken thighs, skinned and boned<br />
Salt and White Pepper<br />
corn starch for coating chicken<br />
5 green chilies, chopped coarsely<br />
3 green onions, chopped<br />
1/2 c water<br />
1 tsp sugar<br />
1/4 c soy sauce<br />
2 tsp corn starchPreparation:</p>
<p><span style="color: #99cc00;"><strong>D</strong><strong><span style="color: #000000;">irections:</span></strong></span><br />
1. Cut up chicken into bite-sized chunks, season with salt and pepper and coat in a dusting of corn starch.<br />
2. Fry onions in oil in a wok, until browned and caramelized.<br />
3. Add ginger and garlic and fry up, add the cumin and coriander, stir for another 30 seconds or so. Push up on the sides of the wok.<br />
4. Add chicken pieces and fry until browned. Then gather the onion mixture into the chicken.<br />
5. Add green chilies and green onion. Stir for about 30 seconds.<br />
6. In a bowl, blend water, sugar, cornstarch and soy sauce. Toss into the centre of the wok. Remove from heat and stir until it thickens into a sauce. Mix in the chicken into the sauce.<br />
7. Serve with steamed rice and steamed or stir-fried vegetables.<br />
By the way, log onto the great wok cooking suggestions. Other chicken recipes include Soy Sauce Chicken and Lemongrass Chicken. The perfect finish to a meal of Green Chili Chicken would be Grilled Fruit and Milk Jelly.</p>
