Sweet Potato Fries

After trying some delicious sweet potato fries at Oliver and Bonacini’s and at Moxies I figured I had to find a recipe and try to make them at home. I figured it’ll take some time to perfect this recipe even though it looks so simple. Again we visit the infamous Food Network for recipe to work with before putting our own twist on it.

Sweet potato fries are on the list of super foods that we should try to incorporate into our daily meals because they’re filled with nutritional benefits such as:

  • Rich in beta-carotene
  • Rich in vitamin C
  • High in fiber if you eat the skin (more than oatmeal)
  • Has a lower glycemic index then most root veggies
  • Sweet potatoes digest very slowly to give you the full feeling longer
  • About 130 calories per medium sized potato

Ingredients
2 sweet potatoes, washed
2 tablespoons canola oil
Salt and freshly ground black pepper
Directions
Preheat oven to 400 degrees F. Place a baking sheet in the oven.

On a cutting board, slice the sweet potatoes in half lengthwise. Slice each half into 6 wedges. Place wedges in a large bowl, add canola oil, season with salt and pepper, to taste, and toss to coat.

Remove the baking sheet from the oven. Place the fries onto the baking sheet and bake for 15 minutes. Turn the fries and bake for another 15 minutes until brown and crispy. Transfer to a serving bowl and serve.
