Strawberry Pancakes!

Who doesn’t like fresh fruit and pancakes in the morning?  I think everyone will enjoy this delicious kick start to their day.

Ingredients:  (serves 4)

3 cups sliced strawberries
1 and 1/4 cups of all purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoons salt
1 milk
1 egg
1 tablespoon melted unsalted butter
1/2 teaspoon vanilla extract
Maple syrup

Directions:

1. In a large bowl mix the flour, baking soda, sugar, backing powder, and salt.

2. In a smaller bowl, whisk the milk, egg, vanilla extract.

3. preheat nonstick pan over medium temperature.

4. Pour the contents of the smaller bowl into the larger bowl and stir in the butter.

5. Fold in the strawberries.

6. Spoon the mixture onto the pan (preferably small 1/4 cup) per pancake.

7. Cook the pancakes for about 3 minutes for first side (see the bubbles set) and flip the pancake over and cook the back side for 2 minutes.

8. Serve with Maple Syrup
