Lunch Recipes – Pineapple Quesadillas

Pineapple Quesadilla

Instead of the old cliché resolution of working out more often this year try making better food choices and cooking more instead of eating out.  All the experts will agree that the key to a healthy lifestyle is healthy diet so let’s make a fresh start.

Here’s a quick and delicious lunch recipe that should be fun!

Ingredients: Serves 2

2 small flour tortillas
2 tbsp tomato sauce
2 tbsp chopped pineapple
2 tbsp sliced bits of ham
1/4 cup shredded cheddar cheese


  1. spread out the tortillas and with a spoon spread out the tomato sauce and add the ham, pineapple bits and top off with a sprinkle of cheddar cheese.
  2. Fold the tortilla in half and place in frying pan/skillet on medium heat.
  3. Cook the Quesadilla until the skin is spotted brown (about 3 minutes).
  4. Turn over the Quesadilla and repeat.
