Avocado, Spinach and Orange Salad


Refreshing salad recipe for your next BBQ.

Ingredients: (serves 4-5)

7 tiny red potatoes, cooked & cooled
5 cups of spinach
2 tablespoons balsamic vinegar
6 tablespoons of extra virgin olive oil
2 tablespoons sugar
1/4 teaspoon of garlic
2 tablespoons of grated orange peel
2 peeled and sliced oranges
2 avocados sliced and peeled
sale & pepper


1.  Mix potatoes and spinach in a large bowl
2.  In a seperate bowl whisk the balsamic vinegar, olive oil, and sugar, garlic, salt & pepper, and orange peel.
3.   Poor dressing into large mixing bowl and add avocado slices.
