This recipe is a tasty fan favourite that should be a crowd pleaser for any occasion or even if you just want to impress your family for dinner. Chicken Tetrazzini! You might say it’s the dish made famous by that New York themed Italian eatery, East Side Mario’s but this time it’s got a little home cooked flare and some family history behind it courtesy of the Tavistock Mennonite Church. Enjojy!
Ingredients: (serves 6)
1 medium onion, chopped
1 clove garlic
4 Tbsp butter
2 Tbsp flour
1/2 tsp salt
1/8 tsp thyme
1 chicken bouillon, dissolved in 1 cup water
1/2 cup cream of milk
2 cups cooked spaghetti
2 cups diced cooked chicken or turkey
1 can sliced mushrooms, drained
1/4 cup diced pimiento
3/4 cup grated cheese
Directions:
- Saute onion and garlic in melted butter until onion is limpy.
- Stir in flour and seasonings. Gradually add chicken broth and cook until smooth and thick. Take off heat and add milk, chicken, mushrooms, spaghetti and pimiento.
- Turn into casserole and sprinkle with cheese. Bake at 350 degrees Fahrenheit for about 30 minutes until lightly browned and bubbly.
